- 6 medium Yukon Gold potatoes
- 3 tbsp unsalted butter
- 2 tbsp olive oil
- 3 cloves garlic, smashed
- 4–5 sprigs fresh thyme
- 1 cup chicken or vegetable broth
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F (200°C).
- Peel the potatoes and cut them into 2-inch thick cylinders.
- Heat olive oil in a large oven-safe skillet over medium-high heat. Season potatoes with salt and pepper, then sear until golden brown on both sides.
- Reduce heat, add butter, garlic, and thyme; baste the potatoes with melted butter.
- Pour broth into the skillet without covering the potatoes. Bake for 25-30 minutes until tender.
