Instructions
- Preheat your oven to 350°F (180°C). Grease and flour an 8" cake pan.
- In a bowl, mix sliced peaches with 1½ tablespoons of sugar and set aside.
- In a large bowl, whisk together flour (starting with 2¼ cups), sugar, baking powder, and salt. Cut in cold butter until crumbly. Stir in the egg until just combined.
- Press half of the crumb mixture into the cake pan, layer with peaches, then top with remaining crumbs.
- Bake for 30-40 minutes until golden brown. Let cool before serving.
