Instructions
- Preheat your oven to 450°F (232°C) and oil a baking sheet.
- Boil salted water in a large pot, add potatoes, and cook for about 15 minutes until tender. Drain.
- Smash each potato on the prepared baking sheet using a flat object, brush with olive oil, and season with salt and pepper.
- Bake for 25–30 minutes until crispy and golden brown.
- Top each potato with cheddar cheese and bake for an additional 2–3 minutes until melted.
- Cook the diced Turkey Bacon in a skillet until crispy (6–8 minutes).
- Assemble the potatoes with sour cream, crispy bacon bits, and chives before serving hot.
