- 4 chicken breasts, thinly sliced

- 1 cup all-purpose flour
- 2 eggs, beaten
- 2 cups panko breadcrumbs
- 1/2 cup grated Parmesan cheese
- 8 slices mozzarella cheese
- 2 cups marinara sauce
- Olive oil for frying
- Fresh basil for garnish
Instructions
- Season chicken slices with salt and pepper.
- Set up three shallow dishes: one with flour, one with beaten eggs, and one with panko breadcrumbs mixed with Parmesan.
- Coat each chicken slice in flour, dip in egg, then cover in the panko mixture.
- Place a slice of mozzarella on each coated chicken piece and roll tightly.
- Fry in heated olive oil until golden brown (about 4-5 minutes per side).
- Place fried rolls in a baking dish, cover with marinara sauce and remaining mozzarella.
- Bake at 375°F (190°C) for 15-20 minutes until bubbly.
- Garnish with chopped basil before serving.
