Instructions
- Preheat your oven to 400°F (200°C). Toss halved baby potatoes with olive oil, thyme, salt, and pepper. Spread them on a roasting pan.
- Roast the potatoes for 25-30 minutes until golden brown and tender.
- Heat olive oil in a skillet over medium heat. Season chicken with salt and pepper; sear until browned on both sides and cooked through.
- In the same skillet, melt butter and sauté garlic until fragrant. Add chicken broth, heavy cream, and Parmesan cheese; simmer until thickened.
- Return chicken to the skillet to coat in sauce and heat through.
- Serve alongside roasted potatoes, garnished with fresh parsley.
