Instructions
- Preheat your oven to 350°F and prepare a 9×5-inch loaf pan by greasing it.
- In a large bowl, mix together egg, pumpkin puree, brown sugar, granulated sugar, coconut oil, sour cream, vanilla extract, cinnamon, pumpkin pie spice, nutmeg until well combined.
- Gently fold in flour, baking powder, baking soda, and salt until just mixed.
- Pour two-thirds of the batter into the prepared pan.
- In another bowl, combine softened cream cheese with granulated sugar and flour until smooth; pour over the batter in the pan.
- Top with remaining batter and smooth it out gently.
- Bake for about 48 minutes or until golden brown and a toothpick comes out clean.
- Cool in the pan for about 15 minutes before transferring to a wire rack.
