- 1½ cups corn (fresh or thawed frozen)
- 1½ cups cherry tomatoes (halved)
- ½ cup cucumber (finely chopped)
- 2 tablespoons fresh basil (minced)
- Optional: ⅓ cup crumbled feta cheese
- Optional: Italian dressing
Instructions
- In a small bowl, whisk together 2 tablespoons olive oil, lime juice, and salt; set aside.
- Heat the remaining olive oil in a skillet over medium heat. Sauté the corn until tender for about 5-7 minutes.
- In a large mixing bowl, combine the cooked corn with cherry tomatoes, cucumber, and basil.
- Refrigerate the mixture until ready to serve. Just before serving, drizzle with dressing and sprinkle feta cheese on top.
