  • 3/4 cup cake flour, spooned and leveled
  • 1 tsp. cornstarch
  • 1 tsp. cinnamon
  • 1/2 tsp. baking soda
  • 1/2 tsp. baking powder
  • 1/2 tsp. salt
  • 8 Tbsp. cold butter, unsalted, cut into cubes
  • 1/2 cup brown sugar, packed
  • 1/4 cup granulated sugar
  • 1 tsp. vanilla extract
  • 1 large egg
  • 1 large egg yolk
  • 2 Tbsp. unsalted butter, melted
  • 3 Tbsp. heavy cream or milk
  • 1 cup powdered sugar, sifted
  • 1 tsp. vanilla
  • pinch salt

Instructions

  1. Prepare the streusel filling by mixing flour, brown sugar, cinnamon, salt, and butter until clumps form.
  2. Preheat the oven to 400°F (200°C) and line baking sheets with parchment paper.
  3. In a large bowl, combine all-purpose flour, cake flour, cornstarch, baking soda, baking powder, and salt.
  4. Cream cold butter with sugars until smooth and mix in egg and vanilla.
  5. Gradually add dry ingredients until fully incorporated.
  6. Shape dough into balls and make an indent for streusel filling in each cookie.
  7. Fill indents with streusel and bake for 8-11 minutes until edges are golden.
