- 8 Tbsp. cold butter, unsalted, cut into cubes
- 1/2 cup brown sugar, packed

- 1 tsp. vanilla extract
- 1 large egg
- 1 large egg yolk
- 2 Tbsp. unsalted butter, melted
- 3 Tbsp. heavy cream or milk
- 1 cup powdered sugar, sifted
- 1 tsp. vanilla
- pinch salt
Instructions
- Prepare the streusel filling by mixing flour, brown sugar, cinnamon, salt, and butter until clumps form.
- Preheat the oven to 400°F (200°C) and line baking sheets with parchment paper.
- In a large bowl, combine all-purpose flour, cake flour, cornstarch, baking soda, baking powder, and salt.
- Cream cold butter with sugars until smooth and mix in egg and vanilla.
- Gradually add dry ingredients until fully incorporated.
- Shape dough into balls and make an indent for streusel filling in each cookie.
- Fill indents with streusel and bake for 8-11 minutes until edges are golden.
- Cool cookies before drizzling icing on top.
