Instructions
- Heat vegetable oil in a large pot over medium heat. Sauté sliced onions until translucent. Add minced garlic and grated ginger; cook for 2 minutes.
- Increase heat and add beef chunks; brown all sides for about 5-7 minutes.
- Sprinkle in curry powder, stirring well to coat the beef; cook for an additional minute.
- Pour in coconut milk and season with salt and pepper. Cover and reduce heat to low, letting it simmer gently for about 1.5 hours until the beef is tender.
