Instructions

- In a bowl, whisk together the egg, sugars, pumpkin, oil, and vanilla until smooth.
- Sift the flour, baking powder, baking soda, pumpkin pie spice, and salt over the wet mixture; mix until just combined.
- Divide the batter among the prepared pans and sprinkle cinnamon sugar on top. Use a toothpick to swirl gently.
- Bake for 28-30 minutes until a toothpick inserted comes out clean. Cool in pans for 10 minutes before transferring to wire racks.
