Instructions
- Preheat oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
- In a large bowl, whisk together flour, cinnamon, baking soda, salt, and nutmeg.
- In another bowl, combine sugar, vegetable oil, eggs, and vanilla extract until smooth.
- Add wet ingredients to dry ingredients; stir gently until just combined.
- Fold in grated zucchini and nuts if using.
- Pour batter into the prepared loaf pan.
- For the streusel topping: mix flour, brown sugar, granulated sugar, and cinnamon in a small bowl; cut in cold butter until crumbly.
- Sprinkle streusel over the batter.
- Bake for 50–60 minutes or until a wooden skewer inserted into the center comes out clean.
- Cool for 10 minutes in the pan before transferring to a wire rack.
