- For the Streusel: 1/2 cup all-purpose flour
- 1/4 cup light brown sugar
- 1/4 cup granulated sugar
- 1 teaspoon ground cinnamon
- 1/4 cup cold unsalted butter
Instructions
- Preheat oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
- In a large bowl, whisk together the flour, cinnamon, baking soda, salt, and nutmeg.
- In another bowl, mix sugar, oil, eggs, and vanilla until smooth.
- Combine wet and dry ingredients gently without overmixing.
- Fold in grated zucchini and nuts if desired.
- Pour batter into the prepared loaf pan.
- For the streusel topping, mix flour, sugars, and cinnamon; cut in butter until crumbly. Sprinkle over batter.
- Bake for about 50–60 minutes or until a skewer inserted comes out clean.
- Let cool for about 10 minutes before transferring to a wire rack.
