- 2 Roma tomatoes, chopped
- 1/2 cup chopped red onion
- 1 clove garlic (minced)
- 1 Tbsp lime juice
Instructions
- In a mixing bowl, combine lime zest, lime juice, olive oil, honey, cilantro, garlic, salt, and pepper. Whisk well.
- Marinate the chicken in the mixture for at least 15 minutes.
- Preheat your grill or grill pan over medium-high heat and lightly brush with olive oil.
- Grill the chicken for about 5-7 minutes per side until it reaches an internal temperature of 165°F (75°C).
- Meanwhile, prepare the avocado salsa by combining diced avocados, chopped tomatoes, red onion, minced garlic, and lime juice in a bowl; toss gently.
- Once grilled, let the chicken rest for a few minutes before slicing. Serve topped with avocado salsa.
