Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a mixing bowl, cream together the room temperature butter and granulated sugar until fluffy. Add the egg and vanilla, mixing until combined.
- In another bowl, whisk together flour, cocoa powder, baking soda, and salt. Gradually add to the wet mixture until fully incorporated.
- Scoop rounded tablespoons of dough onto the prepared baking sheet.
- Bake for about 10 minutes or until edges are set but centers remain soft. Cool on wire racks.
- For the frosting, mix powdered icing sugar, softened butter, milk, mint extract, and optional green food coloring until smooth.
- Frost cooled cookies generously with mint frosting.
- Melt chocolate chips with oil for ganache and drizzle over frosted cookies.
