Instructions
- In a large mixing bowl, combine chickpeas, diced avocado, feta cheese, red onion, parsley, and mint.
- In a small bowl or jar, whisk together olive oil, lemon juice, minced garlic, salt, and pepper.
- Pour the dressing over the salad ingredients and gently toss until well coated.
