- 500g diced chicken breast
- 2 cups broccoli florets
- 2 cups sliced mushrooms
- 1 small chopped onion
- 2 minced garlic cloves
- 2 tbsp soy sauce
- 1 tbsp sesame oil
- 1 tbsp olive oil
- Salt and pepper to taste
- 1 cup jasmine or basmati rice
- 2 cups water
- Pinch of salt
Instructions
- Cook rice according to package instructions; set aside.
- Heat olive oil in a skillet over medium-high heat. Sauté chicken until browned and cooked through; remove and set aside.
- In the same skillet, add sesame oil. Sauté onions and garlic until fragrant, then add broccoli and mushrooms, cooking until tender-crisp.
- Return chicken to the skillet; stir in soy sauce and adjust seasoning as desired.
- Serve hot over rice or noodles.
