Instructions
- Preheat oven to 325°F (165°C) and line a 9×13-inch baking pan with parchment paper.
- In a medium bowl, combine graham cracker crumbs and melted butter; press into the bottom of the prepared pan.
- In a large bowl, beat softened cream cheese and sugar until smooth. Add vanilla extract and eggs one at a time, mixing well after each addition. Incorporate sour cream until combined.
- Pour the cheesecake mixture over the crust; dollop cherry pie filling on top and swirl gently with a knife. Sprinkle chopped pistachios over everything.
- Bake for 40-45 minutes or until set and slightly golden around the edges.
- Cool at room temperature before refrigerating for at least two hours. Cut into squares and serve.
