Ingredients

Scale
  • 340g all-purpose flour
  • 1 teaspoon salt
  • 230g unsalted butter (cold & cubed)
  • 140g ice cold water
  • 4 tart apples (about 700g after peeled, cored, and sliced)
  • 300g red cherries (pitted & halved)
  • 50g brown sugar
  • 20g cornstarch
  • 1 tablespoon ground cinnamon
  • 2 teaspoons vanilla extract
  • 1 beaten egg (for topping)
  • 2 tablespoons sugar crystals or coarse sugar

Instructions

  1. Prepare the pie crust by mixing flour and salt in a bowl. Blend in cold butter until crumbly, then add ice water to form dough. Chill for at least 30 minutes.
  2. For the filling, toss sliced apples, cherries, brown sugar, cornstarch, cinnamon, and vanilla in a bowl until coated.
  3. Roll out one dough disc into an 8-inch circle and fit it into your pie dish. Pour in the fruit filling.
  4. Roll out the second dough disc; create a lattice top or cover entirely. Seal edges and brush with egg wash.
  5. Bake at 375°F (190°C) for about 70 minutes until golden brown and bubbly.
