Instructions

  1. Heat olive oil in a large skillet over medium heat. Add ground beef and cook until browned while draining excess fat.
  2. Stir in chopped onion; cook for about 3 minutes. Add minced garlic and cook for an additional minute.
  3. Incorporate chili powder, cumin, paprika, salt, pepper, and tomato sauce. Simmer for 3–4 minutes before removing from heat.
  4. Lay out tortillas, add cheese to one half of each tortilla, spoon the beef mixture on top, then add more cheese before folding.
  5. In a clean skillet over medium heat, lightly butter or oil the pan and cook each quesadilla for about 2–3 minutes per side until golden brown.
