- 1 tablespoon olive oil
- 1 pound ground beef
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon chili powder
- 1/2 teaspoon ground cumin
- 1/2 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup tomato sauce (or salsa)
- 1 1/2 cups shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 6 large flour tortillas
- Butter or oil for frying
Instructions
- Heat olive oil in a large skillet over medium heat. Add ground beef and cook until browned while draining excess fat.
- Stir in chopped onion; cook for about 3 minutes. Add minced garlic and cook for an additional minute.
- Incorporate chili powder, cumin, paprika, salt, pepper, and tomato sauce. Simmer for 3–4 minutes before removing from heat.
- Lay out tortillas, add cheese to one half of each tortilla, spoon the beef mixture on top, then add more cheese before folding.
- In a clean skillet over medium heat, lightly butter or oil the pan and cook each quesadilla for about 2–3 minutes per side until golden brown.
- Allow to cool slightly before slicing into wedges; serve with sour cream, salsa, or guacamole if desired.
