  • 1 medium green bell pepper, diced
  • 2 small yellow onions, diced
  • Taco seasoning (2 packets or 6 tablespoons homemade)
  • 14 ounces canned diced tomatoes, drained
  • 14 ounces canned whole kernel corn, drained
  • 1/2 cup sour cream
  • 1/2 cup mayonnaise
  • 8 ounces shredded cheddar cheese

Instructions

  1. Preheat the oven to 350°F and spray a 9×13-inch casserole dish with non-stick cooking spray.
  2. In a large skillet, brown the ground beef over medium-high heat until no longer pink. Drain excess grease. Add onions, bell peppers, taco seasoning, and half a cup of water; simmer for about 10 minutes until softened.
  3. In another bowl, combine bisquick with 3/4 cup water to form a loose dough. Spoon into the bottom of the prepared dish and smooth out; bake for 5 minutes.
  4. Layer the cooked beef mixture on top of the biscuit dough followed by the drained tomatoes and corn.
  5. Mix sour cream, mayonnaise, half of the cheddar cheese, black pepper, and green chilies in a separate bowl; spread over the casserole layers. Top with remaining cheese.
  6. Bake for about 30 minutes until golden brown; let sit for 7-10 minutes before serving.
