- 2 pounds ground beef
- 1 medium green bell pepper, diced
- 2 small yellow onions, diced
- Taco seasoning (2 packets or 6 tablespoons homemade)
- 14 ounces canned diced tomatoes, drained
- 14 ounces canned whole kernel corn, drained
- 1/2 cup sour cream
- 1/2 cup mayonnaise
- 8 ounces shredded cheddar cheese
Instructions
- Preheat the oven to 350°F and spray a 9×13-inch casserole dish with non-stick cooking spray.
- In a large skillet, brown the ground beef over medium-high heat until no longer pink. Drain excess grease. Add onions, bell peppers, taco seasoning, and half a cup of water; simmer for about 10 minutes until softened.
- In another bowl, combine bisquick with 3/4 cup water to form a loose dough. Spoon into the bottom of the prepared dish and smooth out; bake for 5 minutes.
- Layer the cooked beef mixture on top of the biscuit dough followed by the drained tomatoes and corn.
- Mix sour cream, mayonnaise, half of the cheddar cheese, black pepper, and green chilies in a separate bowl; spread over the casserole layers. Top with remaining cheese.
- Bake for about 30 minutes until golden brown; let sit for 7-10 minutes before serving.
