- 3–4 lb beef brisket
- 2 tbsp olive oil
- 2 tsp salt
- 1 tsp black pepper

- 1 cup barbecue sauce
- 1 tbsp Dijon mustard

Instructions
- Pat the brisket dry and rub with olive oil; season with salt and spices.
- Sear the brisket on all sides in a skillet over medium-high heat until browned.
- Place brisket in a slow cooker or roasting pan; add beef broth, barbecue sauce, Dijon mustard, and brown sugar. Mix well.
- In the same skillet, sauté onions in butter until translucent; add garlic briefly before transferring to the slow cooker.
- Cover and cook on low for about 8 hours until fork-tender.
- For caramelization: mix brown sugar with drippings in a saucepan until bubbly; coat pulled brisket before serving.
