Instructions
- Preheat your oven to 175°C. Combine graham cracker crumbs, melted butter, and sugar; press into a 9-inch springform pan and bake for 8-10 minutes until golden.
- In a large bowl, beat softened cream cheese until smooth; gradually add sugar, flour, and vanilla extract. Mix in eggs one at a time until just combined.
- Pour batter into the crust and bake for 50-60 minutes until slightly jiggly in the center. Cool in the oven for an hour.
- In a skillet over medium heat, melt butter and caramelize banana slices with brown sugar and cinnamon for about 2-3 minutes.
- Prepare the glaze by simmering alcohol-free vanilla extract with brown sugar and water until thickened.
- Once cooled completely, top cheesecake with caramelized bananas and drizzle with glaze before serving.
