  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 24 oz cream cheese, softened
  • 3 cups peeled and sliced apples (Granny Smith or Honeycrisp)
  • 1 cup granulated sugar (divided)
  • 3 large eggs
  • 1 cup sour cream
  • 1 cup caramel sauce

Instructions

  1. Preheat the oven to 325°F (163°C). Grease a 9-inch springform pan.
  2. In a bowl, mix graham cracker crumbs, melted butter, and sugar until combined. Press into the bottom of the pan and bake for 8-10 minutes until golden. Let cool.
  3. Toss sliced apples with ¼ cup sugar and cinnamon in another bowl; set aside.
  4. Beat cream cheese until smooth in a large bowl. Gradually add remaining sugar; mix well after each egg addition. Stir in sour cream until smooth.
  5. Layer half of the cheesecake filling over the crust, followed by half of the apple mixture. Repeat with remaining filling and apples.
  6. Bake for 55-65 minutes until slightly jiggly in the center. Cool in the oven for one hour before refrigerating for at least four hours or overnight.
  7. Serve chilled with drizzled caramel sauce.
