- 32 ounces whole roasted unsalted cashews

- ⅓ cup packed light brown sugar
- ¼ cup honey
- 2 tablespoons freshly squeezed lime juice
- 2 teaspoons ground chipotle powder
- 2 teaspoons sea salt
Instructions
- Preheat the oven to 350°F and lightly oil a large rimmed sheet pan.
- In a bowl, coat cashews with vegetable oil.
- In another bowl, whisk together brown sugar, honey, lime juice, chipotle powder, and salt until smooth.
- Pour the mixture over the cashews and toss to coat evenly.
- Spread the coated cashews on the sheet pan and bake for 24 minutes, stirring every 8 minutes.
- Once golden brown, remove from oven and let cool completely before storing in an airtight container.
