  • 1 lb boneless, skinless chicken breasts, cut into bite-sized chunks
  • 12 oz linguine pasta
  • 1 cup heavy cream
  • 1 cup shredded mozzarella cheese
  • 4 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tsp Cajun seasoning, (more if you like it bold)
  • Salt and freshly ground black pepper, to taste
  • 3 tbsp unsalted butter, divided
  • 1 tsp Italian seasoning
  • Pinch of crushed red pepper flakes, (optional)
  • Fresh chopped parsley for garnish

Instructions

  1. 1. Bring a large pot of salted water to a boil. Drop in the linguine and cook until al dente, about 9-10 minutes. Reserve ½ cup of the starchy pasta water, then drain and set aside.
  2. 2. While the pasta cooks, season your chicken with Cajun seasoning, salt, and pepper. Ensure each piece is well coated for maximum flavor.
  3. 3. In a large skillet, heat olive oil with 1 tablespoon of butter over medium-high heat. Add the seasoned chicken to the skillet. Let it sear for 7-8 minutes until golden on the outside and fully cooked. Stir in half of the minced garlic during the last minute for added flavor. Transfer the chicken to a bowl and keep warm.
  4. 4. Lower the heat to medium in the same skillet. Melt the remaining 2 tablespoons of butter. Toss in the rest of the garlic and sauté until just fragrant, about 30 seconds.
  5. 5. Pour in heavy cream and stir gently until warmed through for a couple of minutes until it starts to bubble slightly. Add mozzarella and Parmesan cheeses; stir constantly until smooth and cheesy.
  6. 6. Season with Italian seasoning, crushed red pepper flakes (if using), adjusting salt and pepper to taste. If too thick, stir in reserved pasta water gradually.
  7. 7. Add cooked linguine to skillet; toss gently until every strand is coated in creamy sauce.
  8. 8. Plate cheesy linguine first; then spoon seared chicken on top or side. Finish with fresh parsley sprinkle and extra Parmesan or red pepper flakes if desired.
