- 1 large burrata ball (or 2 small)
- 4–5 ripe plums, halved and pitted
- ½ cup pistachios, chopped
- 2–3 sprigs fresh thyme (leaves only)
- 2 tbsp extra virgin olive oil
- 1 tbsp honey (optional)
- Sea salt and cracked black pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Place halved plums cut-side up on a lined baking tray. Drizzle with olive oil and honey if desired.
- Roast for 20-25 minutes until soft and caramelized.
- Let the plums cool slightly before plating.
- Arrange burrata in the center of a serving plate; spoon roasted plums around it.
- Top with chopped pistachios and thyme leaves. Drizzle with olive oil and season with salt and pepper.
- Serve immediately, ideally with toasted sourdough or artisan crackers.
