- 3 cups fresh sliced peaches
- 3 cups fresh quartered strawberries
- ¼ cup granulated sugar
- ¼ cup + 1 tbsp cornstarch
- 1 tbsp lemon juice
Instructions
- Prepare the crust by mixing flour and salt in a bowl. Cut in cold butter until crumbly, then add water and vinegar until dough forms. Chill for at least 30 minutes.
- In a saucepan, brown the butter over medium heat until golden and fragrant; let cool slightly.
- For the filling, combine peaches, strawberries, sugar, cornstarch, lemon juice, and cooled brown butter in a bowl; mix gently.
- Preheat oven to 425°F (220°C). Roll out one dough disc in a pie dish, fill with fruit mixture, cover with the second rolled disc, seal edges, and cut slits on top.
- Bake for about 70 minutes or until golden brown.
