Instructions
- Preheat your oven to 325°F (165°C) and line a cupcake pan with paper liners.
- In a bowl, mix graham cracker crumbs, sugar, and melted butter until combined; press into the bottom of each liner.
- Beat cream cheese and sugar in a large bowl until smooth. Add eggs one at a time, mixing well after each addition, then stir in lime juice and zest.
- Gently fold in blueberries.
- Fill each cupcake liner about ¾ full with the mixture.
- Bake for 20-25 minutes or until centers are set; cool completely before refrigerating for at least 2 hours.
- Serve topped with whipped cream and additional blueberries.
