- 1 and 2/3 cups fresh blueberries
Instructions
- Preheat the oven to 350°F (175°C). Line a springform pan with parchment paper and grease it.
- In a large bowl, mix flour, baking powder, salt, brown sugar, granulated sugar, and optional lemon zest.
- Incorporate cold butter until the mixture resembles coarse crumbs.
- Add eggs and vanilla; mix until combined.
- Press two-thirds of the mixture into the bottom and sides of the prepared pan.
- In another bowl, beat mascarpone, cream cheese, caster sugar, corn starch, and eggs until smooth.
- Layer half of the cheesecake filling over the crust, sprinkle blueberries on top, then add remaining filling and topping crumbs.
- Bake for about 65–75 minutes until golden brown; cool gradually.
