  • 8 oz. mascarpone cheese
  • 8 oz. cream cheese, softened
  • ½ cup + 2 tablespoons caster sugar
  • 2 tablespoons corn starch
  • 1 and 2/3 cups fresh blueberries

Instructions

  1. Preheat the oven to 350°F (175°C). Line a springform pan with parchment paper and grease it.
  2. In a large bowl, mix flour, baking powder, salt, brown sugar, granulated sugar, and optional lemon zest.
  3. Incorporate cold butter until the mixture resembles coarse crumbs.
  4. Add eggs and vanilla; mix until combined.
  5. Press two-thirds of the mixture into the bottom and sides of the prepared pan.
  6. In another bowl, beat mascarpone, cream cheese, caster sugar, corn starch, and eggs until smooth.
  7. Layer half of the cheesecake filling over the crust, sprinkle blueberries on top, then add remaining filling and topping crumbs.
