Instructions
- Preheat your oven to 375°F and line a muffin pan with paper baking cups.
- In a medium bowl, whisk together flour, pumpkin spice, baking soda, and salt; set aside.
- In a large bowl, mix pumpkin puree with granulated and brown sugars. Add eggs one at a time along with vegetable oil and vanilla extract. Gradually incorporate the dry mixture until smooth.
- For the cream cheese swirl, beat room temperature cream cheese until smooth; mix in sugar, egg yolk, and vanilla until well combined.
- Fill muffin tins 3/4 full with batter, then top each with 1 tablespoon of cream cheese mixture and swirl gently using a toothpick.
- Bake for 18-20 minutes or until a toothpick inserted comes out clean.
