- 1 cup semi-sweet chocolate chips, chopped nuts, raisins, or similar (optional)
Instructions
- Preheat your oven to 350°F (175°C) and prepare a greased loaf pan.
- In one bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
- In another bowl, mix vegetable oil, brown sugar, granulated sugar, eggs, applesauce (or yogurt), and vanilla extract until smooth.
- Fold grated zucchini into the wet mixture before gradually adding dry ingredients; stir until just combined.
- Pour batter into the prepared loaf pan and bake for about 55 minutes or until a toothpick comes out clean.
- Allow cooling for about 10 minutes in the pan before transferring to a wire rack.
