- Kosher salt and black pepper to taste
- 2 tablespoons olive oil

Instructions
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or aluminum foil and lightly spray it with cooking spray.
- In a mixing bowl, combine the grated Parmesan cheese, dried herbs, smoked paprika, garlic powder, salt, and pepper.
- Toss zucchini wedges in olive oil until well-coated. Roll each wedge in the Parmesan mixture until evenly covered.
- Place the coated zucchini on the prepared baking sheet in a single layer.
- Bake for 15 minutes, then broil for an additional 2-3 minutes until golden brown. Garnish with chopped parsley before serving.
