- 8 boneless, skinless chicken thighs
- Juice of 2 lemons
- 1/4 cup olive oil
- 4 cloves garlic, minced
- 3 teaspoons dijon mustard
- 3 teaspoons oregano
- 2 teaspoons thyme
- 1 teaspoon dill
- 1 teaspoon paprika
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Place chicken thighs in a large bowl or ziplock bag.
- In a small bowl, whisk together lemon juice, olive oil, garlic, dijon mustard, and herbs until well combined.
- Pour marinade over chicken and seal the bag or cover the bowl; refrigerate for 2 to 6 hours.
- Preheat oven to 350°F (175°C).
- Arrange marinated chicken in a baking dish and pour remaining marinade on top.
- Bake for about 40 minutes until the internal temperature reaches between 165°F and 175°F (74°C – 79°C). Broil for an additional 2-3 minutes for added color.
