- 1 pound ground turkey
- 1/2 cup low sodium soy sauce
- 1/4 cup water
- 2 tablespoons red apple vinegar
- 1 tablespoon brown sugar
- 1 tablespoon granulated sugar
- 2 teaspoons minced garlic
- 1 teaspoon ground ginger
- 1 tablespoon cornstarch
- 2 tablespoons warm water
- 1 tablespoon vegetable oil
- 1 cup finely chopped broccoli
- 2 large carrots, peeled and grated
- 1/2 cup diced onion
- 8 large lettuce leaves (Romaine, Iceberg or Butter Lettuce)
- 2 tablespoons fresh parsley, finely chopped
Instructions
- Prepare the teriyaki sauce by mixing soy sauce, water, vinegar, brown sugar, garlic, and ginger in a saucepan over medium heat until sugars dissolve.
- Whisk cornstarch with warm water; add to the sauce and simmer until thickened.
- In a skillet, heat vegetable oil and sauté onions until soft; add ground turkey and cook until no longer pink.
- Stir in grated carrots and chopped broccoli; cook until veggies soften.
- Combine turkey mixture with teriyaki sauce; simmer for 5 minutes.
- Serve by spooning filling into lettuce leaves and garnish as desired.
