  • 1 teaspoon ground ginger
  • 1 tablespoon cornstarch
  • 2 tablespoons warm water
  • 1 tablespoon vegetable oil
  • 1 cup finely chopped broccoli
  • 2 large carrots, peeled and grated
  • 1/2 cup diced onion
  • 8 large lettuce leaves (Romaine, Iceberg or Butter Lettuce)
  • 2 tablespoons fresh parsley, finely chopped

Instructions

  1. Prepare the teriyaki sauce by mixing soy sauce, water, vinegar, brown sugar, garlic, and ginger in a saucepan over medium heat until sugars dissolve.
  2. Whisk cornstarch with warm water; add to the sauce and simmer until thickened.
  3. In a skillet, heat vegetable oil and sauté onions until soft; add ground turkey and cook until no longer pink.
  4. Stir in grated carrots and chopped broccoli; cook until veggies soften.
  5. Combine turkey mixture with teriyaki sauce; simmer for 5 minutes.
  6. Serve by spooning filling into lettuce leaves and garnish as desired.
