- 350 g Lotus biscoff cookies
- 150 g unsalted butter (melted)

- 3 tart apples (peeled and sliced)
- 55 g all-purpose flour
- 75 g granulated sugar
- 50 g brown sugar
- 3 large eggs
Instructions
- Preheat oven to 180°C (350°F). Combine crushed biscoff cookies with melted butter; press into the bottom of a springform pan and bake for 10 minutes.
- Prepare the streusel topping by mixing melted butter, flour, brown sugar, and oats until crumbly.
- Toss sliced apples with brown sugar and cinnamon; set aside.
- Beat cream cheese and granulated sugar until smooth. Add Greek yogurt, vanilla, spices, and eggs one at a time; mix until combined.
- Layer half of the cheesecake mixture over the baked crust, followed by half of the apples. Repeat layers and top with streusel.
- Bake for about 75 minutes until set but slightly jiggly in the center. Cool gradually before refrigerating for at least four hours.
