  • 1½ teaspoons baking powder
  • ½ teaspoon baking soda
  • 1½ teaspoons ground cinnamon
  • Pinch allspice
  • 1/4 teaspoon coarse kosher salt
  • 1¾ cups (210 grams) all-purpose flour
  • 1 tablespoon butter, at cool room temperature
  • ¼ cup (50 grams) granulated sugar
  • 1 teaspoon ground cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a 9-inch square baking dish by greasing it and lining it with parchment paper.
  2. In a large sauté pan, boil fresh apple cider until reduced by half. Add diced cold butter to the hot cider and whisk to combine.
  3. In a medium bowl, whisk together eggs, sugars, olive oil, sour cream, baking powder, baking soda, cinnamon, allspice, and salt until well blended.
  4. Gradually add the boiled cider mixture to the wet ingredients and mix until combined.
  5. Gently fold in the all-purpose flour until just mixed; avoid overmixing.
  6. Pour batter into the prepared dish and bake for 22–25 minutes until golden brown.
  7. Cool slightly before brushing with melted butter and sprinkling with cinnamon sugar.
