- 1–½ cups fresh apple cider
- 4 tablespoons (66 grams) cold unsalted butter, diced

- ¼ cup (66 grams) sour cream

- 1–½ teaspoons ground cinnamon
- Pinch allspice
- 1/4 teaspoon coarse kosher salt
- 1–¾ cups (210 grams) all-purpose flour
- 1 tablespoon butter, at cool room temperature
- ¼ cup (50 grams) granulated sugar
- 1 teaspoon ground cinnamon
Instructions
- Preheat your oven to 350°F (175°C) and prepare a 9-inch square baking dish by greasing it and lining it with parchment paper.
- In a large sauté pan, boil fresh apple cider until reduced by half. Add diced cold butter to the hot cider and whisk to combine.
- In a medium bowl, whisk together eggs, sugars, olive oil, sour cream, baking powder, baking soda, cinnamon, allspice, and salt until well blended.
- Gradually add the boiled cider mixture to the wet ingredients and mix until combined.
- Gently fold in the all-purpose flour until just mixed; avoid overmixing.
- Pour batter into the prepared dish and bake for 22–25 minutes until golden brown.
- Cool slightly before brushing with melted butter and sprinkling with cinnamon sugar.
