Instructions
- Reduce apple cider in a saucepan over medium heat until halved; cool.
- Mix cream cheese, granulated sugar, and vanilla until smooth for the filling.
- Cream butter and sugars in a separate bowl; add egg yolks, vanilla, and cooled cider reduction.
- Combine flour, baking powder, spices; mix into wet ingredients until just combined.
- Preheat oven to 350°F (175°C). Scoop dough, flatten it, place cheesecake filling in the center, and fold dough around it.
- Bake on parchment-lined sheets for about 11 minutes until edges are golden.
