  • 1/4 tsp ground cinnamon (for topping)
  • 1/8 tsp ground nutmeg (for topping)
  • pinch ground allspice (for topping)
  • 12 tbsp salted butter, melted (for brushing cookies)

Instructions

  1. Prepare an apple cider reduction by simmering the cider in a saucepan until it thickens to about ½ cup.
  2. Mix cream cheese with sugar and vanilla until smooth for the filling; refrigerate.
  3. Combine flour, spices, baking powder, baking soda, and salt in one bowl.
  4. Cream butter and sugars in another bowl; add egg yolks gradually.
  5. Mix dry ingredients into the wet mixture along with the apple cider reduction.
  6. Preheat oven to 350°F (175°C) and prepare a baking sheet with parchment paper.
  7. Form cookie dough around a small amount of cheesecake filling; place on the sheet.
  8. Brush cookies with melted butter and sprinkle with spiced sugar before baking for about 11 minutes.
