- 1/4 tsp ground cinnamon (for topping)
- 1/8 tsp ground nutmeg (for topping)
- pinch ground allspice (for topping)
- 1–2 tbsp salted butter, melted (for brushing cookies)
Instructions
- Prepare an apple cider reduction by simmering the cider in a saucepan until it thickens to about ½ cup.
- Mix cream cheese with sugar and vanilla until smooth for the filling; refrigerate.
- Combine flour, spices, baking powder, baking soda, and salt in one bowl.
- Cream butter and sugars in another bowl; add egg yolks gradually.
- Mix dry ingredients into the wet mixture along with the apple cider reduction.
- Preheat oven to 350°F (175°C) and prepare a baking sheet with parchment paper.
- Form cookie dough around a small amount of cheesecake filling; place on the sheet.
- Brush cookies with melted butter and sprinkle with spiced sugar before baking for about 11 minutes.
